Ravioli, the delicious Italian dumpling that no one would miss while visiting Italy, with its delicious flavour would also bring you the ambiance wherever you are.
Ravioli is known in Venice and Rome since the 14th century. It is pasta dough that can be filled with diverse fillings depending on the region it comes from. It is cooked and served in white or tomato sauce. For example, the Sicilian Ravioli is stuffed with ricotta cheese or other kinds of local sheep cheese.
Steps to Homemade Ravioli
THE DOUGH
· 6 cups all-purpose flour
· 6 large eggs
· 3/4-cup water
· 2 tsp olive oil
THE SAUCE:
· 1 can crushed tomatoes
· 1 cup tomato puree
· 1/2 cup grated Parmesan cheese
· 1/3 cup water
· 1/3 cup tomato paste
· 3 tbsp sugar
· 2 tbsp of mixed minced fresh basil, parsley, oregano
· 1 garlic clove, minced
· Salt and pepper
THE FILLING:
· 3 cups of mixed ricotta, mozzarella, parmesan cheese
· 1 large egg, lightly beaten
· 2 tbsp of mixed minced fresh basil, parsley, oregano
· 1/2 tsp garlic powder
· Salt and pepper
Directions
– Mix the flour with eggs, water and oil forming a ball, knead until smooth and elastic, cover and let rest for 30 minutes.
– Combine the sauce ingredients and bring to boil, then cover and simmer for 1 hour.
– Mix the filling ingredients, divide pasta dough into 6 portions, and roll each portion making it a thin sheet. Add one teaspoonful of filling in each one inch of the dough, cover with another pasta sheet, cut into squares, repeat with remaining dough and filling.
– Boil the Ravioli in salted water for 1-2 minutes, drain and add sauce over ravioli and serve hot.
