NGREDIENTS
Sauce:
• 2 Tbsp olive oil
• 3 onions, peeled, finely chopped
• 4 garlic cloves, finely chopped
• 1 cup crushed tomatoes
• 2 teaspoons dried oregano
• 1/4 teaspoon dried crushed red pepper flakes
• 1/4 cup chopped fresh basil
Chicken:
• 3/4 cup breadcrumbs
• 3/4 cup grated Parmesan cheese
• 1/2 cup all purpose flour
• 2 large eggs, beaten
• 4 boneless chicken breasts
• 4 Tbsp olive oil
• 3/4 cup grated mozzarella cheese
METHOD:
Combine strewed tomatoes, garlic, onions, oregano, fresh basil, red pepper flakes, salt, and pepper. Blend until smooth, then in a large skillet over medium heat add olive oil. Add the blended tomato sauce and cook for about 20 minutes.
Combine breadcrumbs and Parmesan cheese. Cover the chicken breasts with flour, then in the egg and then in the breadcrumb mixture.
Add chicken breasts in a frying pan with olive oil and sauté until golden on both sides. Place chicken breasts onto a lightly greased baking dish. Spread marinara sauce over chicken and bake in oven for about 20 minutes. At the end top chicken breast with shredded mozzarella cheese, once cheese is melted, serve with pasta.
